Kapowie Cilantro Tomatillo Dressing!




I really am quite taken with this dressing. It's creamy, spicy and fresh, just about perfect for when you're craving a little Tex-Mex. For lunch I made a batch of the ultra easy and fast French style GF Socca flat bread on the skillet and piled on some left over avocado bacon salad and dressing. Very satisfying.

Ingredients (makes 5 cups):
I know 5 cups may seem alot but trust me, you'll be using it for dips, pastas, etc. Store in airtight container in fridge.

2 cups of fresh cilantro 
2 large jalapenos, seeded
1 cup of Tomatillio Salsa/Sauce (I used Trader Joe's brand)
5 large cloves of garlic, peeled
1 teaspoon cayenne pepper
2 cups of best foods mayo
2 cups of sour cream or Greek yogurt
olive oil for drizzling
Juice from 1/2 a lime
cracked black pepper and sea salt to taste

Directions:
Wash the cilantro and pat dry. Wash and de-seed the jalapenos (unless you're like me and like it hot!). Peel the garlic and add all of this into your trusty food processor or high powered blender. 



Next add the mayo and yogurt or sour cream, tomatillo salsa, cayenne pepper and squeeze the tweedle out of 1/2 a lime. 




Place the lid on and pulse for about 2 minutes or until well minced and blended.



Do a little taste test and add sea salt and freshly cracked black pepper to taste, perhaps even a tad bit more cayenne. Did you taste the Kapowie? Are you tempted to shamelessly take a big ol spoonful of it? If so, it's done, stop seasoning! Store in airtight container and put into fridge for at least 2 hours to let it set up before serving.
