Easily impressed Yorkshire Pudding


Yorkshire pudding is a richly dense custard(ie) bread and can be served with any meals containing gravy or au jus. It's a great alternative to dinner rolls. For some reason people are always impressed when hear someone can make this. . it's easy! No waiting time for these to rise either!


Ingredients:
1 1/4 cups milk
4 large eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups all-purpose flour, sifted
1 tablespoon oil
dash of sugar
Note: you can make an herb pudding by simply adding 1/2 teaspoon of rosemary, theme, basil, or sage. Adding dried onions and dried garlic is also good. 


Directions: 
Preheat the oven to 450 degrees. Add 1 tablespoon of oil to 1 cake pan or lightly oil muffin pans (if using muffin pans fill only 2/3 to the top) and place into preheated oven for about 10 minutes. 


In a large mixing bowl, add the milk, eggs, salt, pepper and any 1/2 teaspoon of any herb you'd like to use. With a hand mixer,  beat ingredients together. Let batter sit for 10 minutes then slowly add the flour. 


Very carefully pour the batter into the hot cake pan and place back into the oven for about 20 minutes. It's going to puff up and be a bit strange looking but it settles into a nice shape during cooling. Cut up into wedges or if using cupcake pans and serve as a dinner muffin.
