Men just cannot resist these babies



I don't know what it is about BBQ ribs, but men can't seem to get enough of them nor resist them. Gotta be a hands down favorite with the boys. I totally cheat with the bbq sauce because I love Sweet Baby Ray's, I just "doctor it up" a bit. Here is the easiest recipe for these fall off the bone bits of goodness. Grill or bake these little babies and enjoy the compliments.


Ingredients:
2 racks of Baby Back Pork Ribs
1 medium onion, minced
2 cup of "Sweet Baby Ray's BBQ sauce"
1/2 cup of Apricot Jam (can use cherry or raspberry)
1 large tomato, diced and crushed
1 large jalapeno, diced
1/4 cup honey
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke (optional)


The Rub:
2 teaspoon of Kosher salt
1 Tablespoon of freshly cracked black pepper
2 Tablespoon Olive Oil
5 cloves of garlic, minced
1 teaspoon smoked paprika 
1/4 cup Tablespoon dark brown sugar
1 teaspoon oregano


Directions:
In a small bowl mix all of the rub ingredients. 
Wash and pat dry the Baby Back Ribs. 
Place the ribs in a large rectangular baking dish. 
Coat the ribs with the rub, cover and let sit in the fridge for at least 2 hours. 
In small sauce add 1 teaspoon of olive oil and saute the minced onion on medium high heat. Add the tomato and jalapeno, let simmer on medium for about 10 minutes. Lower the heat to medium low and add the bbq sauce, Worcestershire, liquid smoke, jam and honey. Blend well and remove from heat. 


Grill Cooking:
Heat the grill to 350 degrees and place the ribs on the lowest rack to sear. Sear on both sides. Move the ribs to the top rack and lower heat to 225 degrees and close the lid. Grill for at least 2 hours, flipping after each 30 minutes. After 1 1/2 hours brush or dip the ribs with 1/2 of the bbq sauce and return to top rack of the grill for about 30 minutes. Brush with remaining bbq sauce before serving. 


Oven Cooking: 
Preheat oven to 350 degrees. Add the onions, liquid smoke, jalapenos and tomatoes to baking dish. The ribs should be meaty side down. Cover and place in oven.  Bake for at least 2 hours, flipping after each 30 minutes. After 1 hour brush or dip the ribs with the 1/2 of the bbq sauce and return to oven, uncovered for about 30 minutes (meaty side up). Brush with remaining bbq sauce before serving.
