Really naughty garlic lovers chicken wings.



Last summer at one of our bbq's I made my mothers recipe for Vietnamese Garlic Chicken Wings, they are so simple and totally bad for you but it's a guilty pleasure I don't lose sleep over. Our guests devoured them, in fact one of our friends took some home to give to his wife. The next day they came over and when if they would care for a snack, his wife Mae asked if I had any more wings! I gave her the ultra easy recipe. As you can see, the wings aren't heavily battered and contain no red buffalo sauce, but a simple garlic butter sauce. If you're a garlic lover as I am, please give these a try, I promise you'll love them.


Ingredients:
1 large bag of frozen chicken drumlets or 3lbs of chicken wings
1 tablespoon of cayenne pepper powder
1 tablespoon kosher or sea salt
1 tablespoon black pepper
1/2 cup cornstarch
1/2 cup all purpose flour
Garlic Sauce, see recipe


Directions:
  1. Place the drumlets or wings in a large mixing bowl.
  2. Add the cayenne pepper, black pepper, salt, cornstarch, flour and mix well coating each wing. 
  3. Heat the oil in fryer or deep frying pot.
  4. Fry the wings until golden brown, making sure they aren't overcrowded in pot. Line a large mixing bowl with paper towels and transfer cooked chicken to remove excess oil.
  5. As these are frying make the garlic sauce.
  6. Once all the chicken are fried, remove the paper towels from bowl and pour the garlic sauce onto the wings making sure to coat each wing.
